1 3/4cups wholemeal flour | |

1/2tsp baking soda | |
1/2tsp ground cinnamon | |

1cup fresh or frozen blueberries | |
2tbsp olive oil or melted coconut oil |

Directions

Preheat the oven
Heat your oven to 175°C (350°F). Grease a loaf tin or line it with baking paper.

Mix wet ingredients
In a large bowl, whisk the mashed bananas, eggs, almond milk, honey (or maple syrup), vanilla extract, and oil until smooth.

Mix dry ingredients
In a separate bowl, combine the wholemeal flour, baking powder, baking soda, cinnamon, and salt.
Slowly add the dry ingredients to the wet mixture. Stir gently until just combined. Be careful not to overmix.
Fold in the blueberries, reserving a few to sprinkle on top.

Pour the batter into the prepared loaf tin. Scatter the reserved blueberries on top. Bake for 50–60 minutes, or until a skewer inserted in the middle comes out clean.
