1 salmon fillet (120-150g) | |
1/2 courgette, sliced | |
1/2 red bell pepper, chopped | |
6 cherry tomatoes, halved | |
1/2 small red onion, sliced | |
1/4 cup quinoa (uncooked) | |
1tbsp olive oil | |
1 clove garlic, minced | |
Juice of ½ lemon | |
1/2tsp dried oregano | |
1/2tsp smoked paprika | |
Salt & pepper to taste | |
Fresh parsley (for garnish) |

Directions

Cook the quinoa
Rinse well and cook in double the amount of water until fluffy (about 12-15 mins).

Prepare the veggies
Toss courgette, pepper, tomatoes, and onion with ½ tbsp olive oil, salt, and pepper. Roast at 200°C (392°F) for 15-20 mins.

Cook the salmon
Place it on a baking sheet, drizzle with ½ tbsp olive oil, lemon juice, garlic, oregano, paprika, salt & pepper. Bake with the veggies for 12-15 mins (or until flaky).
