2 chicken breast fillets (about 150g each) | |
4 slices fresh mozzarella cheese (approx. 50g per burger) | |
2 brioche burger buns | |
2 leaves of romaine lettuce | |
4 slices of ripe tomato | |
4 slices of cucumber | |
2tsp olive oil | |
2tbsp basil pesto | |
1/2tsp Italian seasoning (or a mix of oregano, thyme, and basil) | |
Salt and black pepper to taste | |
Optional toppings: A few slices of red onion, A handful of rocket leaves, Balsamic glaze |

Directions

Prepare the Chicken
Butterfly the chicken breasts (cut them horizontally but not all the way through, so they open like a book).
Sprinkle with smoked paprika, garlic powder, salt, and black pepper.
Heat 1 teaspoon of olive oil in a frying pan and cook the chicken on medium heat for 4–5 minutes per side or until fully cooked through. Set aside.

Assemble the Burgers
Lightly toast the brioche buns.
Spread mayonnaise (or your preferred sauce) on the bottom bun.
Layer with a lettuce leaf, two slices of tomato, and two slices of cucumber and one slice of mozzarella.
Place the cooked chicken on top, followed by the mozzarella.
Add any optional toppings (red onion, rocket) if desired.
Finish with the top bun.
Mark as complete
