1 1/3tbsp butter
Kosher salt, to taste
Freshly ground pepper, to taste
2 whole large peaches, peeled and sliced
4tbsp chopped pecans, toasted
2 whole shallots, minced
spring onion, diced
2tbsp rice wine vinegar
1 whole lime, juiced

Toast the Pecans
Heat a dry pan over medium heat. Add the chopped pecans and toast, stirring occasionally, until fragrant (about 3-4 minutes). Remove from the heat and set aside.

In a bowl, combine the sliced peaches, toasted pecans, minced shallots, diced spring onions, rice wine vinegar, and lime juice. Stir gently and season with a pinch of salt and pepper. Let the flavours meld while preparing the fish.
