This carrot cake is a much healthier version, using natural sweeteners, gluten-free flour, and Greek yoghurt for the frosting, making it lighter than traditional cakes. It’s a great balance of protein, fats, and carbohydrates!

1tsp ground cinnamon
1/2tsp ground nutmeg
1/4tsp salt
4 large eggs
1/2 cup coconut oil (melted) or olive oil
1/4 cup honey or maple syrup
1tsp vanilla extract
2 cups grated carrots (about 3 medium carrots)
1/2 cup unsweetened applesauce
1/2 cup chopped walnuts or pecans (optional)
1/4 cup unsweetened shredded coconut (optional)
For the frosting (optional, but recommended for a full cake experience):
1 cup Greek yogurt (plain, unsweetened)
2tbsp honey or maple syrup
1tsp vanilla extract

to 180°C (350°F) and grease a 9-inch (23 cm) round cake tin or line it with parchment paper.
